Ingredients
  

  • 5 cups unbleached all-purpose flour (625 g)
  • 1 ¼ cups warm water (295 g)
  • 2 ¼ tsp active dry yeast (10 g)
  • ⅓ cup granulated sugar (65 g)
  • ⅓ cup neutral oil (73 g)
  • 1 ½ tsp kosher salt (9 g)
  • 1 tbsp aquafaba (15 ml) (optional for extra moisture)

Method
 

  1. In a large bowl, combine the warm water, dry yeast, and sugar. Whisk until dissolved and let stand for 5 minutes.
  2. Add the neutral oil and whisk to combine. Then, add flour and salt. Mix until a shaggy dough forms and knead by hand for 5-7 minutes.
  3. Place the dough in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
  4. Preheat the oven to 350°F (175°C). Punch down the dough, divide it into 3 equal parts for braiding, and roll into ropes.
  5. Braid the ropes and place them on a parchment-lined baking sheet. Let rise for another 30-45 minutes.
  6. Brush the tops with aquafaba (optional) and sprinkle with seeds if desired. Bake for 35-40 minutes until golden brown.
