Ingredients
  

  • 5 ears fresh corn, shucked
  • 2 cups cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 4 ounces feta cheese, crumbled
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and freshly ground black pepper to taste

Method
 

  1. In a pot of boiling salted water, cook the corn for 3 minutes to blanch, then transfer to an ice bath to cool. Remove kernels from cobs.
  2. In a large bowl, combine corn, cherry tomatoes, red onion, basil, mint, and feta.
  3. Drizzle with olive oil and vinegar, then season with salt and pepper. Toss gently to combine.
