Ingredients
  

  • 2 large sweet potatoes (washed and dried)
  • 1 tbsp olive oil
  • 1 tbsp peanut butter
  • ½ banana
  • Drizzle of honey
  • ¼ cup cottage cheese
  • ½ avocado (mashed)
  • 1 hard boiled egg
  • 1 fried egg
  • ¼ cup plain or vanilla Greek yogurt
  • ¼ cup berries of choice

Method
 

  1. Preheat the oven to 400°F and line a large baking tray with parchment paper.
  2. Slice the sweet potatoes lengthwise into about 10 slices, each about ¼” thick. Discard ends.
  3. Arrange sweet potato slices on the baking tray, brushing each side lightly with olive oil.
  4. Bake for about 15-20 minutes until tender but firm enough to hold toppings.
  5. Allow to cool briefly and then add your favorite toppings such as peanut butter, banana, cottage cheese, avocado, eggs, Greek yogurt, or berries.
