Method
- Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
- Peel and cut the sweet potato into strips, coat with oil, and roast for 20-25 minutes until tender.
- Rinse sushi rice and cook according to package instructions. Once cooked, mix with rice vinegar and salt; allow to cool slightly.
- On a bamboo sushi mat, place a nori sheet shiny side down.
- Wet your hands and spread about 1/2 cup of sushi rice evenly over the nori, leaving a small border at the top.
- Lay strips of roasted sweet potato and avocado along the bottom of the rice-covered nori.
- Roll tightly, using the mat to help, and wet the top edge to seal.
- Slice with a wet knife and serve with soy sauce and spicy mayo if desired.
