Ingredients
  

  • 1 medium sweet potato, cut into strips
  • 1 cup sushi rice
  • 1 tbsp rice vinegar
  • 1 tsp salt
  • 4 nori sheets
  • 1 avocado, cut into strips
  • sesame seeds for garnish
  • soy sauce for serving
  • spicy mayo optional

Method
 

  1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Peel and cut the sweet potato into strips, coat with oil, and roast for 20-25 minutes until tender.
  3. Rinse sushi rice and cook according to package instructions. Once cooked, mix with rice vinegar and salt; allow to cool slightly.
  4. On a bamboo sushi mat, place a nori sheet shiny side down.
  5. Wet your hands and spread about 1/2 cup of sushi rice evenly over the nori, leaving a small border at the top.
  6. Lay strips of roasted sweet potato and avocado along the bottom of the rice-covered nori.
  7. Roll tightly, using the mat to help, and wet the top edge to seal.
  8. Slice with a wet knife and serve with soy sauce and spicy mayo if desired.
