Ingredients
  

  • 1 lb chicken (thinly sliced, or any protein such as shrimp or tofu)
  • 1 tbsp sugar
  • 1 tbsp ginger (minced)
  • 2 cloves garlic (crushed)
  • 1 stalk lemongrass (minced)
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp oil
  • 12 rice paper wrappers
  • 12-24 lettuce leaves (red or green)
  • 1/2 English cucumber (julienned)
  • 12 sprigs cilantro
  • 24 leaves mint
  • 24 leaves Thai basil (optional)

Method
 

  1. At least 1 hour before (or overnight), marinate the protein: crush 1 tbsp of sugar, ginger, garlic, lemongrass, and any chilies in a mortar. Mix with protein and sauces; refrigerate.
  2. Heat oil in a skillet; fry the protein until charred, or grill it until cooked. Remove from heat.
  3. Dip rice paper in warm water; lay on a flat surface. Place lettuce, protein, vermicelli, veggies, and herbs on the bottom third.
  4. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly from bottom to top. Repeat until all ingredients are used. Serve with dipping sauce.
