Ingredients
  

  • 3 cups (311 g) vanilla wafers (crushed)
  • 1 cup (120 g) chopped pecans
  • 1 cup (120 g) powdered sugar (plus extra for rolling)
  • 2 tablespoons (14 g) cocoa powder
  • 1/3 cup (79 ml) light corn syrup
  • 1/2 cup (120 ml) rum
  • 1/2 cup (40 g) flaked coconut (optional)
  • 1 cup chocolate sprinkles (optional)

Method
 

  1. In a large bowl, combine crushed vanilla wafers, chopped pecans, powdered sugar, cocoa powder, and flaked coconut (if using).
  2. In another bowl, mix the corn syrup and rum. Pour the wet mixture into the dry ingredients, stirring until everything is well combined.
  3. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  4. After chilling, take small portions of the mixture and roll them into 1-inch balls.
  5. Roll the rum balls in additional powdered sugar, chocolate sprinkles, or shredded coconut if desired.
  6. Place the rolled balls on a tray lined with wax paper and let them dry for 30 minutes before transferring them to an airtight container. They can be stored at room temperature for up to two weeks or in the freezer for up to three months.
