Steps
- Preheat oven to 350°F.
- Blend rolled oats into a fine flour, then whisk together dry ingredients (oats, protein powder, cinnamon, baking powder, baking soda).
- In another bowl combine pumpkin puree, Greek yogurt, and eggs.
- Fold wet mixture into dry ingredients until just combined.
- Stir in chocolate chips.
- Spoon batter into a 12‑cup muffin tin lined with paper.
- Bake for 30 minutes, or until a toothpick comes out clean.
- Cool on a rack before serving.
