  2. In a bowl combine peanut butter, coconut sugar, egg, and vanilla extract; mix until smooth.
  3. Stir in vanilla whey protein powder, baking soda, and salt until just incorporated.
  4. Fold in chocolate chips.
  5. Drop rounded tablespoons of dough onto the prepared sheet, spacing 2 inches apart.
  6. Bake 10 minutes, or until edges are lightly golden.
  7. Let cookies cool on the sheet for 5 minutes then transfer to a wire rack.
