  • 2 cups cooked brown rice
  • 1 large sweet potato cubed
  • 1 avocado sliced
  • 2 cups fresh spinach
  • 1 lime juice
  • 2 tbsp creamy peanut butter
  • 2 tbsp olive oil
  • 1 tbsp soy sauce

Steps
  1. Preheat oven to 425°F and toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper; roast 20‑25 minutes until tender.
  2. While the sweet potatoes roast, season chicken with salt and pepper, drizzle with remaining oil, and pan‑sear or grill until cooked through, about 8 minutes per side; slice.
  3. In a bowl whisk lime juice, peanut butter, soy sauce, and the remaining olive oil into a smooth dressing.
  4. Divide cooked rice into two bowls, top with roasted sweet potatoes, sliced chicken, avocado, and spinach; drizzle with dressing and serve.
