Ingredients
  

  • 12 oz extra-firm tofu, crumbled
  • 4 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons avocado oil
  • 8 oz shiitake mushrooms, sliced
  • 1 cup water chestnuts, chopped
  • 3 garlic cloves, minced
  • 3 teaspoons fresh ginger, minced
  • 4 green onions, sliced
  • 2 large carrots, finely shredded
  • 1 teaspoon sriracha
  • 12 large lettuce leaves (butter or romaine)
  • sesame seeds for garnishing

Method
 

  1. Start by crumbling the tofu into small pieces and set aside. Heat a skillet over medium heat and add a splash of avocado oil. Add in the crumbled tofu and cook until browned, about 5-7 minutes, stirring occasionally. Remove and set aside.
  2. In the same skillet, add shiitake mushrooms and cook for 2-3 minutes until they begin to release moisture. Stir in the water chestnuts, garlic, ginger, and half of the green onions. Sauté until fragrant, about another minute.
  3. Return the tofu to the skillet. Add hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha, and stir everything together until coated. Cook for an additional 2-3 minutes until heated through and thickened slightly.
  4. Remove from heat and serve the tofu mixture scooped into lettuce leaves. Garnish with sesame seeds and remaining green onions. Enjoy!
