Ingredients
  

  • 1 block (16 oz) extra-firm tofu, crumbled
  • 2 tbsp vegetable oil
  • 8 oz shiitake mushrooms, chopped
  • 8 oz cremini mushrooms, chopped
  • 1/3 cup raw cashews, chopped
  • 1 can (8 oz) water chestnuts, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 4 green onions, chopped (white and green parts separated)
  • 4 tbsp hoisin sauce
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tsp sriracha (optional for spice)
  • 1 head Boston or butter lettuce, leaves separated
  • sesame seeds (for garnish)

Method
 

  1. Press the tofu between paper towels to remove excess moisture, then crumble it into small pieces.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the crumbled tofu and cook for about 5-10 minutes, until golden brown.
  3. Stir in the chopped shiitake and cremini mushrooms, cooking for another 3-4 minutes until they soften.
  4. Add the cashews, water chestnuts, garlic, ginger, and half of the green onions, and sauté for 2-3 minutes until fragrant.
  5. Mix together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha in a bowl, then pour it over the vegetable-tofu mixture. Stir to combine and heat through for 1-2 minutes.
  6. Remove from heat and spoon the mixture into the lettuce leaves. Garnish with green onion tops and sesame seeds. Serve immediately and enjoy!
