Ingredients

  • 1 lb Powdered Sugar
  • 10 tbsp Unsalted Butter (melted)
  • 3 tbsp Evaporated Milk
  • 2 1/2 cups Creamy Peanut Butter
  • 2 tsp Vanilla
  • 2 oz Cream Cheese
  • 1/2 cup Brown Sugar
  • 2 oz Butter (for streusel)
  • 1/4 cup Coffee (to taste)

Method

  1. In a large bowl, mix together powdered sugar, melted butter, evaporated milk, and vanilla until a dough forms. Adjust consistency as needed by adding more sugar or milk.
  2. Dust a flat surface with powdered sugar and roll out the dough to a desired thickness.
  3. Spread an even layer of creamy peanut butter over the dough.
  4. Roll the dough tightly into a log, starting from one edge and tucking it inwards as you go.
  5. Cut the log into equal pieces, about 1 inch thick.
  6. For an optional variation, mix brown sugar and cream cheese until smooth, and spread on the rolled dough before rolling it up.
  7. Bake at 350F for 30-35 minutes, or until golden brown.
  8. Allow to cool slightly before drizzling with a simple coffee glaze made from powdered sugar and strong coffee.
  9. Enjoy your peanut butter rolls fresh or store at room temperature!
