Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 1 1/2 cups frozen peas
  • 1/2 cup shallot, chopped
  • 12 ounces mini shells or fusilli
  • 2 teaspoons cornstarch
  • 2/3 cup dry white wine
  • 1 1/4 cups milk
  • 1 cup grated Manchego cheese or Pecorino
  • 3/4 teaspoon pepper
  • 2 tablespoons chopped dill or mint

Method
 

  1. In a large pot, bring salted water to a boil and cook the pasta according to package directions until 1 minute less than al dente. Drain and set aside.
  2. In a large pan over medium heat, add olive oil and sliced garlic, cooking until fragrant, about 1 minute.
  3. Add chopped shallots and sauté for 2-3 minutes until translucent.
  4. Stir in the frozen peas and cook for another 2 minutes.
  5. In a small bowl, mix cornstarch into the cold white wine, then pour into the pan along with the milk, stirring until slightly thickened.
  6. Gradually add the grated cheese, stirring until melted and creamy.
  7. Add drained pasta to the sauce, tossing to coat.
