Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or agave syrup
  • 1/2 cup peanut butter (or sunflower seed butter)
  • 1/4 cup mini chocolate chips (or raisins)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup shredded coconut (optional)

Method
 

  1. In a mixing bowl, combine rolled oats, applesauce, honey, and peanut butter.
  2. Mix thoroughly until well combined.
  3. Stir in chocolate chips, cinnamon, salt, nuts, and coconut (if using).
  4. Once the mixture is combined, use your hands to form small bites (about 1 inch).
  5. Place bites on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes before serving.
  7. Store in an airtight container in the fridge for up to a week.
