Ingredients
  

  • 2 cups rolled oats (gluten-free if needed)
  • ½ cup sunflower seeds
  • ½ cup shredded unsweetened coconut
  • ½ tsp cinnamon
  • ⅓ tsp sea salt
  • ¼ cup maple syrup
  • ¼ cup sunflower seed butter
  • 1 tsp vanilla extract
  • ½ cup chopped dried fruit (such as cranberries or apricots)

Method
 

  1. Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, sunflower seeds, shredded coconut, cinnamon, and sea salt.
  3. In another bowl, combine the maple syrup, sunflower seed butter, and vanilla extract, then mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir to combine. Make sure to add the chopped dried fruit as well.
  5. Spread the mixture evenly onto the prepared baking sheet, pressing it down gently.
  6. Bake for 20 minutes, stirring halfway through to ensure even cooking. The granola should be golden brown.
  7. Remove from the oven and let cool completely, then break into clusters. Store in an airtight container and enjoy!
