Ingredients
  

  • 4 large bell peppers (any color)
  • 1/2 pound ground beef
  • 1/2 cup cooked rice
  • 1 (15-ounce) can diced tomatoes
  • 1/2 cup kidney beans, drained
  • 1/2 cup frozen corn kernels
  • 1/3 cup shredded mozzarella cheese
  • 1 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes

Method
 

  1. Cut the tops off the bell peppers, removing the seeds and membranes.
  2. Place the peppers cut-side up in a microwave-safe dish.
  3. In a mixing bowl, combine the ground beef, cooked rice, diced tomatoes, kidney beans, corn, salt, and crushed red pepper flakes.
  4. Fill each pepper with the meat and rice mixture, pressing down gently.
  5. Cover the dish with plastic wrap and microwave on high for about 15 minutes, or until the meat is cooked through and the peppers are tender.
  6. Carefully remove the wrap, sprinkle shredded mozzarella cheese on top of each pepper, and microwave for an additional 1-2 minutes until the cheese has melted.
