Method
- Wash the bok choy thoroughly under cool water to remove any dirt.
- Slice off the base and separate the leaves from the stems. For baby bok choy, slice in half lengthwise.
- If using larger bok choy, chop leaves into 2 ½-inch pieces. Cut stems into bite-sized pieces, about 1/2 inch thick.
- Heat a wok or deep skillet over high heat and add the oil. Swirl to coat the surface.
- Add the bok choy stems and stir fry for 2 minutes, tossing frequently.
- Add the garlic, MSG, and shrimp paste (if using), tossing a few times to combine.
- Turn off the heat, drizzle with sesame oil, and season with salt and pepper. Serve immediately.
