Ingredients
  

  • 2 lbs strawberries, hulled and sliced
  • 1 quart water (4 cups)
  • 2 cups granulated sugar

Method
 

  1. Rinse, hull, and slice the strawberries.
  2. Place sliced strawberries in a medium saucepan and cover with water.
  3. Bring to a boil, then reduce to a medium simmer for 20 minutes. Skim any foam that rises.
  4. Strain the liquid through a fine mesh strainer, separating the solids from the juice.
  5. Return the liquid to the pot and add 2 cups of sugar. Stir to dissolve, bringing it back to a boil.
  6. Let the syrup simmer for an additional 5 minutes to thicken slightly.
  7. Allow to cool completely before storing in a glass container in the refrigerator for up to several weeks.
