Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 cups gluten-free quick oats
  • 1/2 cup mini chocolate chips
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds

Method
 

  1. Line an 8-inch square pan with parchment paper, leaving an overhang.
  2. In a large bowl, mix peanut butter, honey, vanilla, cinnamon, and salt until smooth.
  3. Stir in oats, chocolate chips, pumpkin seeds, and sunflower seeds until well combined.
  4. Press the mixture firmly into the pan using a spatula.
  5. Refrigerate for at least 30 minutes until set.
  6. Lift the bars out using the parchment overhang, cut into 12 individual bars, and store in an airtight container in the fridge.
