Ingredients
  

  • 1 cup fruit (chopped)
  • ¼ cup spinach (chopped)
  • ¼ cup vegetables (chopped)
  • 1 cup green grapes
  • 1 cup strawberries (diced)
  • 1 cup peaches (chopped)
  • 1 cup blueberries
  • ¼ cup apple juice (no added sugar)
  • 2 tablespoons raw honey
  • 3 tablespoons gelatin (preferably collagen, grass-fed)

Method
 

  1. Place silicone molds on a baking sheet or line an 8x8" square dish with wax paper and lightly grease; set aside.
  2. In a high-powered blender, combine fruit, vegetables, and ¼ cup apple juice. Blend on high until smooth, adding more juice if needed.
  3. Add honey and vanilla, blending until smooth.
  4. Taste mixture, adjusting honey if desired.
  5. Transfer mixture to a saucepan and whisk in gelatin over medium heat until dissolved, about 3 minutes (do not boil).
  6. Fill molds or pour mixture into the baking dish while keeping it warm.
  7. Refrigerate for at least 2 hours until set.
  8. Once set, remove from molds or dish, cut, and enjoy!
