Ingredients
  

  • ¾ cup (192g) natural creamy peanut butter
  • ⅓ cup (104g) pure maple syrup
  • 2 tablespoons virgin coconut oil
  • 1 teaspoon vanilla extract
  • pinch of sea salt if needed
  • 3 cups crispy brown rice cereal
  • 1 cup chocolate chips (optional for topping)
  • 1 tablespoon coconut oil (for melting chocolate)
  • Fancy sea salt for sprinkling

Method
 

  1. Line an 8x8 inch pan with parchment paper. Set aside.
  2. In a medium pot over low heat, combine peanut butter, maple syrup, coconut oil, and vanilla extract. Stir until smooth.
  3. Add crispy brown rice cereal and gently mix until fully coated. Pour the mixture into the prepared pan and flatten the top.
  4. Melt chocolate chips with 1 tablespoon of coconut oil in a microwave-safe bowl, microwaving in 30-second intervals until smooth.
  5. Pour the chocolate over the treats and spread evenly.
  6. Chill in the refrigerator for 30 minutes, then sprinkle with sea salt and cut into 16 bars.
