Ingredients
  

  • 2 large apples
  • 1 cup chopped fresh or frozen mango
  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup peanut butter
  • 1/4 cup granola
  • 1/4 cup shredded coconut
  • 1/4 cup mini chocolate chips
  • 5 tablespoons grass-fed beef gelatin powder
  • 1-2 tablespoons honey or maple syrup (optional)

Method
 

  1. Slice the apples into thin wedges.
  2. In a blender, combine mango, orange juice, and any remaining fruit; blend until smooth. Stir in sweetener if needed.
  3. Drizzle peanut butter over the apple slices.
  4. Sprinkle granola, coconut, and mini chocolate chips on top of the apples.
  5. Bloom gelatin with 1/4 cup cold juice in a bowl. Then, heat the mixture until the gelatin dissolves and mix back into the fruit puree.
  6. Pour into small silicone molds or spread into a baking dish. Chill for at least 2 hours.
  7. Serve apple nachos immediately and enjoy; cut gummies into desired shapes once set.
