Method
- Run the cooked rice noodles under cold water, then drain and pat dry with a paper towel. Toss with olive oil and set aside.
- In a small bowl, mix the soy sauce, oyster sauce, fish sauce, honey, and water. Set aside.
- Heat a large skillet over medium-high heat and spray with cooking spray. Cook chicken until browned and cooked through, about 3-4 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic and chili until fragrant, about 30 seconds.
- Add onion and bell pepper; sauté until soft, about 5 minutes.
- Stir in carrots and green onions, sauté for another 2-3 minutes.
- Push veggies to the sides and add noodles to center, sauté until slightly browned, about 2-3 minutes.
- Toss noodles with veggies and chicken. Add the sauce and stir until everything is evenly blended and the noodles absorb the sauce.
- Remove from heat, mix in fresh basil, and serve immediately.
