Ingredients
  

  • 1 tbsp avocado oil
  • 1 block (14 oz) firm tofu, cut into cubes
  • 1 medium onion, chopped
  • 6 garlic cloves, minced
  • 1 med zucchini, chopped
  • 1 large red bell pepper, thinly sliced
  • 2 to 4 tbsp Thai green curry paste (to taste)
  • 1 (14 oz) can full-fat coconut milk
  • 1 tbsp coconut sugar
  • 2 tbsp soy sauce or tamari
  • Juice of 1 lime

Method
 

  1. Heat the avocado oil in a large skillet over medium-high heat. Add the cubed tofu and cook for 6-8 minutes until golden and crispy, turning occasionally.
  2. Transfer the tofu to a plate and set aside. In the same skillet, add the onion and sauté for about 2 minutes until softened. Stir in the garlic and cook for an additional minute until fragrant.
  3. Add the zucchini and red bell pepper, cooking for another 3 minutes.
  4. Pour in the coconut milk, add the green curry paste, coconut sugar, and soy sauce. Stir until well mixed and adjust seasoning as needed.
  5. Return the tofu to the skillet and gently stir to combine. Allow to simmer for 2-3 minutes to heat through.
  6. Remove from heat, add lime juice, and serve over rice or noodles, garnished with fresh cilantro if desired.
