Ingredients
  

  • 1 tablespoon coconut oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 2 large garlic cloves, chopped
  • 1 tablespoon fresh ginger, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon sea salt
  • 1 tablespoon tomato paste
  • 1 can (400 ml) coconut milk
  • 450 g green beans, cut into thirds
  • 225 g baby potatoes, halved
  • Juice of half a lime
  • A handful fresh cilantro, for garnish

Method
 

  1. Heat the coconut oil in a large pan over medium heat. Add cumin seeds and cook until they sizzle.
  2. Add the onion and cook for 2-3 minutes until translucent. Stir in garlic and ginger, cooking for another minute until fragrant.
  3. Mix in ground cumin, ground coriander, paprika, turmeric, chili flakes, and salt. Toast spices for 1-2 minutes.
  4. Stir in tomato paste and pour in coconut milk, then add green beans and potatoes. Mix well.
  5. Reduce heat to low, cover the pan, and simmer for 20-25 minutes, or until vegetables are tender.
  6. Squeeze lime juice, and season with salt and pepper to taste.
  7. Just before serving, sprinkle with fresh cilantro. Serve with steamed rice or naan bread.
