Method
- In a large bowl, whisk together the flour, protein powder, baking powder, and salt.
- In another bowl, mix the milk, eggs, melted butter, and vanilla extract (and mashed banana if using).
- Pour the wet ingredients into the dry ingredients and combine until there are no lumps. If it's too thick, add a splash of milk.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
- Serve hot with toppings of your choice! Refrigerate any unused batter for up to 2 days.
