  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups milk (any type)
  • 3 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 ripe banana (optional, for sweetness)

Method
 

  1. In a large bowl, whisk together the flour, protein powder, baking powder, and salt.
  2. In another bowl, mix the milk, eggs, melted butter, and vanilla extract (and mashed banana if using).
  3. Pour the wet ingredients into the dry ingredients and combine until there are no lumps. If it's too thick, add a splash of milk.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
  6. Serve hot with toppings of your choice! Refrigerate any unused batter for up to 2 days.
