Method
- Press the tofu by wrapping it in a kitchen towel and placing a heavy object on top for about 10 minutes. Cut into cubes.
- Toss the tofu cubes in cornstarch to coat evenly.
- In a large skillet or wok, heat 1 tablespoon of canola oil over medium heat. Add the tofu and fry until golden brown, about 2-3 minutes on each side. Remove and set aside.
- In the same skillet, heat the remaining tablespoon of oil. Add garlic and ginger, sautéing until fragrant.
- Add the broccoli, bell peppers, and carrots, stir-frying for 4-5 minutes until tender.
- Return the tofu to the pan, add the soy sauce, and toss everything to combine. Cook for another 1-2 minutes.
- Serve hot over noodles, rice, or alone as a healthy snack.
