Ingredients
  

  • 2 (14-ounce) packages extra-firm tofu
  • 2 tablespoons canola oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons cornstarch
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 2 cups broccoli florets
  • 2 cups bell peppers (julienned)
  • 2 cups carrots (julienned)

Method
 

  1. Press the tofu by wrapping it in a kitchen towel and placing a heavy object on top for about 10 minutes. Cut into cubes.
  2. Toss the tofu cubes in cornstarch to coat evenly.
  3. In a large skillet or wok, heat 1 tablespoon of canola oil over medium heat. Add the tofu and fry until golden brown, about 2-3 minutes on each side. Remove and set aside.
  4. In the same skillet, heat the remaining tablespoon of oil. Add garlic and ginger, sautéing until fragrant.
  5. Add the broccoli, bell peppers, and carrots, stir-frying for 4-5 minutes until tender.
  6. Return the tofu to the pan, add the soy sauce, and toss everything to combine. Cook for another 1-2 minutes.
  7. Serve hot over noodles, rice, or alone as a healthy snack.
