Ingredients
  

  • 1 cup strawberries (diced)
  • 1 cup blueberries (chopped)
  • 1 cup peaches (chopped)
  • ¼ cup carrots (cooked and cooled)
  • ½ cup apple juice
  • 2 tablespoons honey (or maple syrup)
  • 3 tablespoons unflavored gelatin
  • 3 tablespoons lemon juice
  • 1 cup assorted frozen berries (raspberries, etc.)

Method
 

  1. In a blender, combine strawberries, blueberries, peaches, carrots, and apple juice. Blend until smooth.
  2. Pour the mixture into a saucepan and heat over low until warm.
  3. Stir in honey or maple syrup and mix well.
  4. Sprinkle gelatin over the lemon juice in a separate bowl and let sit for 5 minutes to bloom.
  5. Whisk gelatin mixture into the warm fruit mixture until completely dissolved.
  6. Pour the mixture into silicone molds and refrigerate for at least 1 hour to set.
  7. Once set, pop the fruit snacks out of the molds and enjoy!
