- Preheat your oven to 350°F (177°C). In a food processor, combine the flour, brown sugar, baking soda, salt, and cinnamon. Pulse to mix well.
- Add the cold plant-based butter and pulse until the mixture resembles coarse sand.
- Incorporate the maple syrup, plant-based milk, and vanilla extract, pulsing until a crumbly dough forms. If the dough is too dry, add more milk as needed.
- Turn the dough out onto parchment paper, forming it into a disc about an inch thick. Roll out to about 1/4 inch thickness.
- Cut into squares or preferred shapes and place on a baking tray lined with parchment paper.
- Bake for 15-20 minutes until the edges are lightly golden. Allow to cool on a wire rack, then serve or store in an airtight container for up to 3 weeks.
