Ingredients
  

  • 7 strips bacon
  • 5 breakfast sausage links
  • 4 cups frozen cubed hash brown potatoes O'Brien
  • 5 large eggs
  • 3/4 cup shredded Cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter
  • green onions for garnish

Method
 

  1. In a large skillet, cook bacon until crispy over medium heat. Remove bacon and set aside, reserving some drippings in the skillet.
  2. Add the frozen hash brown potatoes, salt, and pepper to the drippings in the skillet. Cook for about 5 minutes, stirring occasionally.
  3. While the potatoes are cooking, crumble the bacon and set aside. After 5 minutes, add the breakfast sausage links until browned.
  4. Cover and cook the potatoes for about 12-15 minutes or until they're golden brown. If the skillet is dry, add butter as needed.
  5. Once the potatoes are golden, create wells in the mixture and crack an egg into each well. Cover and cook on low heat until eggs are set, about 8-10 minutes.
  6. Once the eggs are cooked, sprinkle crumbled bacon and shredded cheese over the top, allow it to melt slightly, then serve garnished with green onions.
