- Line a baking sheet with parchment paper.
- Toast the pecan halves in a skillet until fragrant, then set aside.
- In a medium saucepan, combine butter, granulated sugar, brown sugar, salt, and evaporated milk. Cook over medium heat, stirring frequently, until the mixture reaches a boil.
- Continue boiling the mixture for about 5 minutes, or until it reaches 235-240°F on a candy thermometer (soft ball stage).
- Remove from heat and quickly stir in the vanilla extract, toasted pecans, and orange zest. Mix until the candy loses its gloss and thickens slightly.
- Immediately drop spoonfuls of the mixture onto the prepared parchment paper. Allow the pralines to cool completely and set at room temperature.
