Ingredients
  

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 cup plain whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons kosher salt
  • 1 1/2 tablespoons sweet paprika
  • 2 teaspoons smoked paprika
  • 4 teaspoons sugar
  • 2-3 slices raw bacon (cut into 1/2-inch pieces)
  • 1 cup of your favorite BBQ sauce

Method
 

  1. Trim the chicken of excess fat and cut into 1-inch cubes. In a large bowl, toss with salt and refrigerate for at least 30 minutes.
  2. Combine yogurt, olive oil, sweet paprika, smoked paprika, and sugar in a medium bowl.
  3. Pat chicken dry and mix with the yogurt mixture.
  4. Process bacon in a food processor to a smooth paste. Mix bacon paste with the chicken till well coated.
  5. Skewer the chicken and grill over medium-high heat, turning until browned and cooked through (about 10 minutes).
  6. Brush with BBQ sauce and continue grilling for 1-2 minutes.
  7. Let rest for 5 minutes before serving.
