Ingredients
  

  • 1 1/2 tbsp agar flakes or 1 tsp agar powder
  • 1 cup coconut water
  • 2/3 cup juice from canned lychee
  • 1/4 cup sugar
  • 3-4 tbsp white sugar
  • 2 cups mixed fruits (your choice, chopped)
  • 1/4 cup water
  • 1 tbsp lemon juice (optional)
  • 2 tsp agar powder

Method
 

  1. In a saucepan, combine agar powder and coconut water. Allow it to sit for about 10 minutes.
  2. Turn the heat to medium and bring the mixture to a gentle boil while stirring continuously.
  3. Stir in sugar until dissolved, then remove from heat.
  4. Pour a bit of the mixture into molds and distribute your mixed fruits.
  5. Let the first layer set for 10 minutes.
  6. Heat the juice and any remaining agar until fully dissolved, then pour over the fruits.
  7. Cool and refrigerate for at least 2 hours until set.
  8. Once firm, unmold and enjoy chilled!
