Ingredients
  

  • 1 16 oz block soft or silken tofu
  • 2 sliced scallions (white and green parts separated)
  • 2-3 cloves minced garlic
  • 2 teaspoons brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili crisp
  • 1 teaspoon toasted sesame oil (optional)

Method
 

  1. Carefully remove tofu from package; silken tofu can be delicate. If it's in a container, run a knife around the edge to help release it.
  2. If serving cold, blot excess moisture with a towel.
  3. In a skillet, combine white scallion parts, garlic, brown sugar, soy sauce, rice vinegar, and chili crisp. Heat over medium-high until bubbling.
  4. Simmer for 1-2 minutes until the mixture thickens. Stir in green scallions and cook for another minute. Remove from heat and optional sesame oil.
  5. To poach, gently lower tofu into simmering water for 5-8 minutes until heated through.
  6. Serve hot or cold, drizzled with sauce, and garnish with scallion greens.
